Lemon Meringue Pie

My mom would make lemon meringue pie for Easter and I remember being fascinated by the meringue; how could egg stand up? Here is my first attempt at lemon meringue made from scratch (except the crust was bought at Whole Foods). My nephew, Presten, helped squeeze the lemons and I lost some skin while zesting the peels. I don't think any got in the pie, but if so, it's protein!

Presten and I decided to have a photo shoot with our creation. The first three images are his and the others are me torturing him to eat more pie for pictures. He loved the meringue, but the filling was a bit tart for his taste buds.

It was a great breakfast food!
