Carrot Cake

I woke up this morning unable to swallow because my throat felt bloody raw as if someone had taken 90 grit sandpaper to the inside of it. My sinuses were another area of contention and all the salt water in the Pacific Ocean couldn't clear out a tiny passage to breathe.

On my way to Whole Foods to find relief in a cup of tea I felt a huge compulsion to make a cake. And carrot cake with cream cheese frosting it was!

Carrot cake is my all time favorite cake and never fails to make the day seem a bit brighter with every delicious fork full.

I found a great, moist recipe online, click the post title for the link. I did make a couple of amendments to the recipe, added golden raisins to the batter and vanilla bean to the frosting. It really is as good as it looks.
